Mloukhiya

The mloukhiya is a popular dish Tunisia N containing Corète pot (Corchorus olitorius L.) reduced out of powder. It is about a kind of ragout of Viande with a Sauce Vert dark even almost black. It is generally prepared by Superstition to celebrate the Hégire according to the Moslem Calendrier so that the New Year's Day is “green”, i.e. full with Bonheur. It is also prepared at the end of a Deuil and at the end of the Ramadan.

The term of mloukhiya more particularly indicates the dried sheet of the corète (plant which resembles the Verveine) reduced out of powder fine and being used for the preparation of sauce. It is also used with the Machrek (in particular with the Lebanon and in Egypt).

It is thought often wrongly that this powder is containing spinach S because it is green, considered full with Fer and very heating.
