Milfoil

A milfoil is a part of Pâtisserie made of two sheets of paste, many layers of feuillettée paste, and cream pâtissière. The top is frozen with sugar freezes. One can add jam or fruits to it.

The milfoil would have been created by François Pierre of the Game preserve in his Cuisinier François in 1651. It would then have been improved by Marie-Antoine Lent, cook of Talleyrand.
