The Spirit of the Meetings of Aubrac

It is “an appointment full with charm or courteous familiarity and the scholarship good child are of rule… an open appointment and without finishes, where the specialist and the scholar are neighborly with enthusiastic readers… it is also an invitation to enjoy Aubrac by a curious alchemy… the gastronomical rejoicings, fortifying pauses are proposed within a magic framework, terrace of an old sanatorium to the simple pastoral picnic on banks of the lake of the monks - a water reserve which keeps the memory of the medieval orders. The legendary aligot with the buron of Canuc- in full sky take part in the identity of the Meetings…” (P.J. Catinchi, Le Monde).

“The Aubrac is perhaps the place where to dare impossible” (the P.J. Catinchi, Le Monde, August 2004)
