The marmot is a digger Mammifère about the Rongeur S, of the kind Marmota .

The most known species in Europe is the marmot living in the mountains ( Marmota marmota ) whereas in North America, it is the Marmota monax called locally siffleux or groundhog in English (literally: ground pig).

Uses

Formerly, the mountain dwellers of the Alps and besides benefitted from the marmot, which they drove out for his Fourrure, its Chair, its grease. The Chasse is always authorized in France although very strictly regulated. In North America, the hunting of marmotta monax is free, because the species there is extremely widespread and is classified like “harmful effect”. The fur of the marmots of Asia and North America is always used under the name of murmel . The mountain dwellers emigrated in the big cities also presented it like open attraction.

Nowadays, its interest is rather of a tourist nature, it became one of the major symbols of the the Alps.

Although protected the majority from the year, the marmot are edible. It is a hard meat of wild animal to the faisandée meat taste.

Marinade of marmot

Ingredients :

  • 1/2 1 liter from red wine
  • 2 large onions cut slices some and carrot out of discs
  • 4 cloves, 1 shallot, 1 clove of garlic
  • glass with cognac liquor, as much of olive oil
  • thyme, bay-tree

Preparation:

  • To let bathe the meat in the marinade of 12:00 at 3 days with the expenses. To turn over the meat from time to time
  • To drain the pieces, to make rissoler with oil or the margarine
  • To add a few pieces of plugs
  • To cover the whole of marinade in a hurry
  • to let gently cook from 20 to 30 minutes
  • To add the remainder of marinade and to let cook 20 more to 30 minutes
  • To salt, pepper

Folklore and derived expressions

The American marmot is prone of a tradition celebrated by the North-Americans (American and Canadian) each year the February 2nd called the Jour of the marmot ( groundhog day ); according to whether this one sees or not its shade, that will announce one late or early spring.

In this order of ideas, it was also used in Publicité S (example: the marmot and the paper of Aluminum of the packing of a Chocolate of the mark Milka since a publicity carried out by Chris Noonan in 1998).

To the Quebec, one often gives the nickname of Marmot to people without scruple who deceive and exploit people. In France, one uses the expression “ to sleep as a marmot ” when a person sleeps peacefully and deeply. See the article devoted to with the animalist idioms

Origin of the name

Of Latin " driven montis": mouse of the mountain. This would be the animal of which it is question when " was the mountain confined of a souris"? " is called; siffleux" with the Quebec, because it whistles to prevent danger. The english-speaking name it " groundhog" (reads.: " pig of terre") ; in German it is the " Murmeltier" : literally the animal ( Tier ) which marmonne, marmot ( murmelen , moemelen in Dutch).
