Margose

The margose ( Momordica charantia ), also named momordic, balsamic pear, African cucumber or bitter melon, is a Plante climbing of the family of the Cucurbitaceae , therefore related with the Courge, cultivated in the hot countries for its edible fruit although very land-mark.

Scientific name: Momordica charantia L., family of the Cucurbitaceae , subfamily of the Cucurbitoideae , tribe of the Joliffieae , subgroup of the Thladianthinae .

The margose is well too bitter to be consumed raw. This is why one finds it in the kitchen Chinese, cooked with the vapor, added to Chinese soups or inserted in a traditional dish, the pig with the bitter melon, whose principal ingredients are Porc, Oignon S, Gingembre, sauce with black beans and bitter melon.

It is also a recurring ingredient of the Cuisine réunionnaise. It is called then margoze . One finds a variety not very bitter that réunionnais call them Margoze of India .
