Lonzu
Lonzu (Lonzi in the plural) is a typically Corsican speciality of Charcuterie It is manufactured starting from the nets of Porc There are four lonzi by pig. The cut out pieces are formed of a fatty part and a thin part plain. After cutting, they are directly salted (approximately 35 grams per kilo) and are placed at the expenses in a container during 4 to 5 days. The flesh returns a little liquid then and the pieces are washed with the Vin, are dried and peppered. One then slips the net into a bowel of pig which one ties up. Those are then smoked then out-of-date at the cellar.
