The little nun is a small cake containing gingerbread, of honey and orange marmalade. Speciality of Dijon, one also finds it in Champagne-Ardenne, particularly in the area rémoise, and until in the Lyonnais and even below.

With the the Middle Ages the nuns manufactured this cake, which explains its name.
