The latxa is a race ovine E Spanish.
Origin
It belongs to the ovine races of the Basque Country with long fleece which was not crossed with blood of merino because of an import ban of exogenic animals. It is for a long time high in the Spanish provinces of Biscay and Guipuzcoa.Il exists two subraces: the latxa will cara will negra (LCN) with black head, and the latxa will cara rubia (LCR) with russet-red head.
Morphology
It carries a fleece to very long hairs, almost to touch by ground. The short hairs of the head are coloured russet-red or black. The ram has twisted horns which surround the ears. The LCR measures 65 cm with the garrot and the LCN 75 cm.Aptitudes
It is high mainly for its milk intended for the development of the cheese AOP Idiazabal. The ewe produces approximately a liter of daily milk, over one 140 days period for the LCN and 155 days for the LCR. Goes up to place in spring, the summer occurs in Estive and the lambing between October and March. The young people are separated very early to reserve milk with cheese-making manufacture. They are sold with fatteners or are nourished with dried milk and are finished the summer with grass of the mountain pastures, then giving Broutard S to the tasty meat.External bonds
