Its part of Grattecap, grafted in 1884, still contains the whole white type of vine collection that Edouard had advised with the owner of the time, become his/her friend soon. In 1934, it adopts the current label, barred " of gold and sable" , drawn by his/her Jean son and devoted by the 1929 red been used with the Palate as Buckingham, in 1936. Jean, manager of the field since 1940 for the account of his father, inherits it in 1955. He gradually led it to his current dimensions with his two younger sons, Tristan and Loïc.Today, after a major restoration of the wine storehouses in 1989, Tristan (general administration) and Loïc (technical direction) continue a family tradition which always sacrifices the output to quality. The white wines surprise by their delicacy, their complexity and their astonishing aptitude for ageing. With the image of large Pessac-Léognan, the reds are all harmonizes some, balance and elegance.
The soil
Wine
After careful manual Grape harvest, the grapes are gathered in small boxes, to avoid their crushing and to reduce as much as possible harmful oxidations to their freshness. The wine making is led so as to reduce as much as possible always harmful oxidations to the freshness and the harmony of the unit.
The vat " rouge" profit from complete equipment, with several tables of sort manual, allowing picking off, pressing and the encuvage in time record. The product, so much of the old vines than of the young plantations giving the second wine - red LAGRAVE MARTILLAC -, is vinified in tanks in oak or stainless steel, with electronic control of temperature.
The red wines are then high from 18 to 20 months out of barrels of oak, renewed each year per third. The setting in bottles is carried out after joining with the egg whites and homogenization of the various selections. Only the best fermented enters the high-class wine of Castle LATOUR MARTILLAC.
The white vine is collected by sort successive, with measurement of its maturation. The bunches are in a hurry with old, in slow rotations. Musts are cleansed cold, only the clear juice having to ferment in barrels of oak, also renewed per third each year. This method ensures the conservation of the natural flavors of the fruits, the complexity of those in front of much with that of the oldest pieces, planted in 1884 and 1928. Young plantations, in the same way high, give second white wine LAGRAVE MARTILLAC.
The white wines are preserved on dregs during more than one year, then bottled dark ensuring their best blooming during tens of year.
