Late grape harvest

Name " Late Grape harvest " is reserved for the high wines of Alsace starting from type of vines collected in surmaturity, several weeks after the grand opening of the grape harvest.

The type of vines used are the type of vines known as " nobles" : the Riesling, the gray Pinot, the Gewurztraminer and the Muscatel of Alsace. The flavors of type of vine and the power of these wines are accentuated thanks to the phenomenon of concentration due to the drying of the bunches, like with the development of the noble rot. (Botrytis cinerea) Very appreciated out of aperitif or with the dessert, the Late Grape harvest also accompagent with happiness foie gras or a raised cheese.
