Lasagne

The lasagnes are pasta products in the shape of broad plates. It is also about a generally made preparation of alternate layers of pastes, cheese and of meat sauce, and also of sauce Béchamel.
They are of Italian origin , notably of Bologna.

The Italian word lasagna is derived from the old Greek λάσανα/ lásana which means “tripod of kitchen”. This word was then employed by the Romains to indicate a container of cooking, the lasanum . The Italians employed then the word to indicate the dish in which the lasagnes were made. Now, the word lasagna ( lasagne in the plural) indicates nothing any more but the preparation.

The first references to the lasagnes date from the 13th century; the receipts of this time did not use Tomate S which were then unknown in Europe.

The green lasagnes ( lasagne made green ) are an alternative of the pastes to which spinach S were added.

According to the receipts, various cheeses are used; generally of the Ricotta, the Mozzarella or the Parmesan.
