The grooves is the interior bark Cinnamomum verum (Cannelier or Cannellier, syn. Cinnamomum zeylanicum ), a Tree with persistent Sheets pertaining to the family of the Lauraceous and originating in the Sri Lanka.
Description
The Cannellier is a tree from 10 to 15 meters height. Its Feuille S is of a brilliant green, oblong form and measures from 7 to 18 cm length. Its Fleur S has a greenish color and a rather unpleasant odor. The fruit of the cinnamon-tree is a bay of 1 cm diameter in the form of bludgeon and color crimson. The bark is collected at the rain season.
Use
The grooves is known since the Antiquité, and it was used by old the Égyptiens in the process of the Embaumement. The Bible, Hérodote and other classic authors refer there.
The tree is cultivated a little everywhere in the world, but best quality is produced in Sri Lanka. The latter has a beautiful pale yellow color brown, a strongly scented odor, and a singularly soft, hot and pleasant taste aromatic. Its savor is due to the aromatic Huile which it contains. This essential Oil, it also marketed, is prepared by hammering the bark harshly, by letting it macerate in sea water, then in distilling the whole. It is of a yellow color but, with the particular odor of cinnamon and of a very powerful aromatic taste.
One can find cinnamon in many preparation, energy of the Moyen-âge at our days. However the arrival of this one in France would have taken place only in 1220 but, at present, the historians are still divided on this subject. One can find this spice in the famous Hypocras, a medieval drink among others.
This essential oil is made up of 65- 90% of cinnamic Aldéhyde, 4 to 12% of phenol S (especially Eugénol) and the following compounds: Camphor, Pinene, cinéol, phellandrene, etc It stimulates digestion and breathing, is Antiseptique (active against the bacillus of the Typhoïde), antispasmodic, vermifuge; it is indicated in the gastro-intestinal lifelessness and spasms, the asthenia grippale (J. Valnet).
The grooves is mainly used in Cuisine like Condiment and aromatic substance, in partnership with the Pomme, in the preparation of Chocolat S and Liqueur S, but also in the Indian Cuisine. It is used by the Drug company.
