Kriek

The Kriek is a Belgian Bière fermented with acid cherries (also called Morello cherries). Traditionally " Schaerbeek krieken" (a Belgian variety of Morello) of the surroundings of Brussels are used. Kriek is a Dutch word for acid cherries . As the cherries Schaerbeek became more difficult to find, of the brewers replaced them (partially or entirely) by other varieties of acid cherries, sometimes coming from other countries.

Traditionally, Kriek is manufactured by breweries of Brussels and its neighborhoods and using a beer Lambic in which the cherries are added (with the core). A lambic is a dry and acid Belgian beer, of spontaneous fermentation without semi-sparkling nor foam and known to be native of Brussels. A traditional kriek manufactured starting from a beer basic lambic is acid and dry. The cherries are left during several months, causing a refermentation by the sugar addition. Theoretically no sugar is lost what gives a fruity taste. There is then a process of maturation after the cherries were withdrawn.

More recently, the brewers of lambic add sugar to the finished product of their beer, with an aim of making them less acid and accessible to more a general public. They also use cherry juice more than the fruits them even what makes it possible to decrease the time of maturation.

The Raspberry or Frambozenbier is related, with a less traditional beer, fermented with raspberries rather than of cherries. The kriek is also related with the Gueuze, which is not a fruit beer but which is also based on the beer lambic refermentation. Certain breweries, like Liefmans, manufacture cherry beers based on the beers Oud bruin instead of the beers Lambic. Technically, these beers should not be called Kriek, although some of enter they are products of high-quality.
