Kombucha

The kombucha (to pronounce KB-m-bou-tcha) is an acidulous drink of Asian origin obtained by the means of a symbiotic culture of Bactérie and Levure in a sweetened medium: herb tea + sugar or honey, grape juice. It is traditionally prepared in Russia and China with sweetened The; of Japanese origin , it is prepared there with Algue S Konbu, from where the name meaning “ with the konbu ”.

The Symbiote is usually called “mother of kombucha” (vulgarly “Champignon”), viscous membrane of a few centimetres thickness. Put in culture in a container nonmetal containing the sweetened solution and covered with a linen to avoid dust but to let pass the air, the mother develops with a young layer on the side exposed to the air, and more coloured old layer containing dead mushrooms forming a deposit in the content of the container.

Composition

With the analysis, the solution contains Glucuronic acid , Gluconic acid , Lactic acid , amino-acid , compounds Antibiotique S, Vitamine S B1, B2, B3, B6, B12, Folic acid, Enzyme S, and alcohol (approximately 0,5%). The Carbonic gas released by the Fermentation will give to this drink a very refreshing effervescence.

The yeasts transform sugar into alcohol, the bacteria alcohol in acids: each one in addition produced to organic substances from which the other symbion profits. The acidification of the solution prevents the bacteria, yeasts and Moisissure S undesirable to develop.

The structure of the mother is made up of Cellulose worked out by some of the bacteria.
