Jasmone

The jasmone C11H16O is a carbonyl compound (Cétone), giving its perfume to the Jasmine. It is presented in the form of a pale yellow liquid to the odor of Céleri, but which evokes the odor of Jasmin when it is diluted. It is used in Parfum ery in the form of methyl jasmonate.

The jasmone exists in two forms:

  • cis-jasmone, presents in the extracts of jasmine.
  • trans-jasmone
The jasmone obtained by synthesis contains the two forms. Consequently, if a perfume contains the transone, it is not entirely of vegetable origin.
