Isomaltase
see also: Etymology of Isomaltase
The isomaltase is a Enzyme which breaks the flexible bonds the Saccharide S, which cannot be broken by the Amylase or the Sucrase. That involves the digestion of the Polysaccharide S with the bonds alpha 1-6. Its substrate, the Dextrine is a product of digestion by the Amylase which retains its bonds 1-6 (its bonds alpha 1-4 being already broken by amylase). The product of this enzymatic digestion of dextrin by Isomaltase is the Maltose.
The isomaltase assistance the amylase to digest dextrin to produce maltose.
