Invertase

Invertase is an enzyme of the mucous membrane of the small intestine which hydrolizes food saccharose and glucose or fructose.

The invertase () is the Enzyme used by the Abeille S to convert the nectar into Miel. In its industrial form, it is a derivative of Levure S. In food industry, following the example bees, invertase is used to divide the Saccharose into a molecule of Fructose and one of Glucose and thus to improve the lifespan of the produits.
