Index of saponification

The Indice of saponification of a Lipide is the mass of potash (expressed out of Mg) necessary for:

  • To neutralize the free fatty-acids and
  • to saponify esterified fatty-acids
contents in 1 G of fat contents.

The index of saponification is calculated with the following formula:

Is = \ frac {56*10^3} {M_ {Ag}}
with 56 for the molar mass of KOH
It is necessary to multiply this index by 1,2 or 3 according to whether one deals with mono, di, or triglyceride.

If the analyzed greasy substance contains a sorting pure Glycéride, the Indice of saponification makes it possible to know its molar Masse (thus its structure).

If the analyzed greasy substance contains a mixture of Glycéride S and free fatty-acids, the measurement of the Indice of saponification does not make it possible to know its molar Masse directly. It is initially necessary to determine the Acid value and to deduce the Indice from it from ester.

This index is given hot (contrary to the Acid value).
