Hen with the white
The hen with the white is a culinary old woman speciality of Normandy.
It is about a hen put to cook with very soft fire with carrots, turnips, leeks, studded onions and a Bouquet furnished in a White sauce wet Cidre and of water. The Sauce of accompaniment is then elaborate using eggs and of fresh Cream wet juice of cooking.
