Harira
The will harira is a Soupe of origin Morisque which belongs to the tradition Morocco groin.
It is often used as principal dish of the rupture of the fast during the month of Ramadan. It is then accompanied by dates, hard-boiled eggs, crepes to honey and pastry makings (mkharqa, sfouf, zammita, etc).
It prepares while making cook the following ingredients together:
- Water
- Tomato
- Onion
- lens
- Chick-pea
- Parsley
- Flour (to thicken, watered in water and added at the end of the cooking)
- Celery
- Coriandre
- smen (rancid Butter)
- small pieces of meat or chicken meat offals
- Curcuma, saffron, Pepper, salt
- Vermiculation, or rice
