Haddock

The haddock or haddock ( Melanogrammus aeglefinus ) or swindler or Haddock , is the single one representing Melanogrammus (of the Gadidae).

Distribution

It is a alive Poisson near to the bottom (from 10 to 200 m).

Description

The haddock has the general aspect of the Poisson S of his family, the Gadidae: spindle-shaped body, three dorsal fins… Its back is Noir.

The size of the Haddock which one can find in the trade oscillates between 30 and 50 cm.

Commercial names

In France, it is improperly called “place” in the area of Arcachon, “saint-stone” in the ports of the the North Sea, “haddock”, “habillot”, “small dunkey”…

Gastronomy

It is an appreciated food but becoming increasingly rare.

When he is smoked, he is often called by his anglophone name of Haddock . The nets then are traditionally dyed with the Roucou (E160b), which gives them a Couleur orange sharp similar to that of the Mimolette (whose dyed is obtained besides thanks to this same food dye).
