Guillaume Tirel

Guillaume Tirel , known as Taillevent , born with Pont-Audemer (the Eure) in 1310 and died in 1395, is a Cuisinier French.
Taillevent was child of kitchen of Jeanne d' Évreux, Queux of the king Philippe de Valois and of the duke of Normandy, first hone and sergeant of weapons of Charles V and first rider of kitchen of the king. It is with him undoubtedly that must apply a part preserved at the Trésor of the charters , and who attests that in 1362, the Duc of Normandy gave to Guillaume Tirel, known as Taillevant, its hone (cook, coquus), the sum of one hundred francs gold for its goods and pleasant services, and so that it bought a house downtown of Paris in order to be more close serving the duke.
In 1381, it enters to the service of Charles VI like first rider of kitchen of the king who it anoblit and near which it will become in 1392 Maistre of the garrisons of kitchen of the King .
It is commonly given for the author of the Viandier, considered as the oldest book of French receipt, written at the request of Charles V, therefore before 1380. The oldest version that it us remainder is dated from the 15th century, but the original would have been written at the 13th century.
He died in 1395 and its tomb is visible with the museum of Saint-Germain-in-Bush hammer. François Villon immortalisé this large cook by two worms of his Will: “ If gone to veoir in Taillevent In the chapter of fricassure ”.
Taillevent is also the name of a prestigious Parisian gourmet restaurant.
