Groundnut oil

The groundnut oil is a plant oil food prepared and extracted starting from peanuts (Arachide S, arachis hypogaea ) by means of a hydraulic Presse. They are an oil with suitable color very limpid for cookings at high temperatures, which makes this suitable oil to fry food, but also to prepare Mayonnaise S or the Vinaigrette S for salads.

It is about an oil very appreciated in the Asian kitchen in particular for cooking in the Wok.

Composition

The composition in fatty-acids of the groundnut oil used for the human consumption is following (mass the expressed as a percentage by decreasing order, variation according to source) 1:

  • Acid oleic (C18: 1 ω-9 monoinsaturé): 35 - 72%
  • Linoleic acid (C18: 2 ω-6 polyinsaturé): 13 - 43%
  • Palmitic acid (C16: 0 saturated): 7 - 16%
  • Stearic acid (C18: 0 saturated): 1.3 - 6.5%
  • Acid behenic (C22: 0 saturated): 1.0 - 5.0%
  • Acid arachidic (C20: 0 saturated): 0.5 - 3% lignoceric
  • Acid (C24: 0 saturated): 0.5 - 3%
  • Acid gadoleic (C20: 1 ω-9 monoinsaturé): 0.5 - 2.1% α-linoleic
  • Acid (WENT) (C18: 3 ω-3 polyinsaturé): < 0.6% érucique
  • acid (C22: 1 monoinsaturé): < 0.5%

For 100 G of groundnut oil coming from South America, there is on average ²:

  • monoinsaturés Fatty-acids: 39 G (primarily oleic)
  • essential Fatty-acid Omega-6: 38 G
  • Fatty-acid saturated: 23 G (palmitic, stearic, behenic, arachidic)
  • Less than 0.1 G of essential fatty-acid Omega-3

More (in terms of dietetics):

Less:

  • Relatively rich in fatty-acid saturated (compared with oils of olive, colza or sunflower)
  • Low in essential fatty-acid Omega-3. Let us recall that the ideal contribution is an omega-6/oméga-3 ratio ranging between 1/1 and 4/1 (it is in the example above of 380/1)

Another use

The groundnut oil of second extraction is used in Savon nery.
