The gougères are Burgundian specialities made Chou pastry and Fromage, the grated cheese being mixed with the still tepid chou pastry.

The gougères can have various forms: in crown, to cut out in shares, or small individual cabbages.

One generally uses rather strong cooked cheeses in taste, like the county or the Gruyère.
