Gaztanbera
The will gaztanbera is the Caillé ewe traditional of the Basque Country. The word will gaztan-bera is analyzed like “tender cheese”. It is also called mamia , a word which means “marrow” in Basque, by association of consistency.
It prepared in the houses by depositing in the Kaiku stones heated in the embers on which one came to pour the ewe's milk to cook it. With cooling, milk is emprésuré. One lets it rest one hour and half.
Will gaztanbera consumes itself cold, with the manner of a Yoghourt. It owes its charm and its typicity with the savor of the ewe's milk and the flavors of roasted developed in contact with the stone. One can consume it with honey or sugar.
