Fumaric acid

The fumaric acid (E297) (C4H4O4) is a organic acid natural present in the majority of the fruits and many vegetables.

Commercially manufactured by chemical syntheses. It belongs to the metabolic way of each alive cell. It is the Isomère trans of the Maleic acid , but it is more stable than the latter.

Synthesis

The fumaric acid is obtained by heating the maleic acid in the presence of a Catalyseur, such as the Hydrochloric acid (HCl). The double linking between two carbons breaks and is reformed by supporting the isomer trans , that is to say the fumaric acid.

Use

In the medical field

The fumaric acid is used in the treatment of the Psoriasis.

In the food field

It is used as acid and stabilizing structure in many products. Also used as source of acid in yeast.

Reduction of the production of methane in the cows

On an experimental basis the addition of fumaric acid in the food mode of the cows in intensive breeding strongly reduced the production of methane.
