Fourme of Montbrison

The fourme of Montbrison is a Fromage French of the Forez, profiting from a AOC since 1972.

Description

It is a cheese containing cow's milk, with spotted paste, of an average weight of 2 kg. Its name fourme comes from Latin formed which would be also at the origin of the word cheese.

Tasting

The fourme of Montbrison expresses with wonder the perfume of the flowers of Bruyère and Gentiane which opens out in the pastures of altitude. Under orange crust, its fair, flexible and marbled paste of blue delivers a fine and fruity taste.

Its period of optimal tasting is spread out May at October after a Affinage from 5 to 8 weeks, but it is also excellent from April at December.

Manufacture

After a salting in the course of moulding, the fourmes lying on the chêneaux ones out of wood of spruce and are turned over to the hand of a quarter of tower every twelve hours. During this refining, they are pricked with long needles to support the development of the bluish marblings.

Production: 504 tons in 2003.

Surface of production

Contrary to his/her “sister” the Fourme of Ambert, the Fourme of Montbrison is produced in a relatively geographically concentrated zone (Monts of Drill):

  • 28 communes of the department of the the Loire
  • 5 communes of the Department of the Puy-de-Dôme

History of the AOC

The May 9th 1972 was created a name of controlled origin common to the Fourme of Ambert and the Fourme of Montbrison, the Fourme of Ambert and Montbrison , which lasted nearly thirty years. Two names were separated by last decrees the February 22nd 2002.

The difference between the two fourmes lies from now on in the current techniques of draining and salting:

  • the Fourme of Ambert undergoes a reduced draining and salting by brine and/or with dry salt on the surface;
  • the Fourme of Montbrison undergoes pre-draining, crushing and salting in the mass of curd.
