Ester index
The Indice of ester of a Lipide is the potash mass (KOH) (expressed out of Mg) necessary for to saponify esterified fatty-acids contained in 1 G of fat contents.
The Indice of ester is equal to the Indice of saponification for the pure Glycéride S. It makes it possible to determine the molar Masse (thus the structure) of the Glycéride S.
This index is not measured, it is calculated: Index of ester = Index of saponification - Acid value.
