Enchiladas
The enchiladas are Tortilla S containing flour of Maïs which can be glossy various way, as in red Chile, green Chile, the salsa or the mole (peppers, almonds, cocoa and spices - this receipt varies according to the area but it always contains peppers and cocoa not sweetened). The enchiladas are usually furnished with chicken, especially in Mexico City but one finds some also furnished with ox, mashed potatoes beans Frijoles refritos, with shrimps, pig etc. To stuff the enchiladas, it is preferable to fry them just to make them soft, then to deposit them on paper absorbing to eliminate excess from oil. To stuff and roll them, then to deposit them in a dish with selected sauce and to furnish with cheese for gratiner to the furnace. The enchiladas are often served with sour cream top and coriandre in sheets. The accompaniments can be rice and/or kidney beans Frijoles refritos and/or guacamole and/or cream.
