Elver
The elver or the elver is the Alevin (or Leptocéphale) of the Anguille. The vernacular name used to indicate these alevins depends on the area.
With a maximum of 2 900 alevins per kilogram, it measures 7 mm at the time to engage on the return since the Sargasses where it will become adult in twelve months.
the Mortagne-on-Gironde is a port specialized for fishing with the elver.
In most of the Spain and south-west of the France, the elver is regarded as mets very fine when it is slightly fried and been useful in caquelon. With a price of 1.000 euros the kilo paid to the fisherman in 2004, the halieutic pressure, is very strong on this species which one cannot still make reproduce in captivity.

In 2005, another species of elver started to proliferate in China Sea. One counts until 6 000 per kilogram of Anguilla japonica and eight month are enough so that it reaches the weight necessary for the sale. It was discovered that a disinfectant named Vert malachite, used by the Chinese stockbreeders to reduce the health hazards in their fish ponds to strong density, presented carcinogenic risks, which stopped its export temporarily.
Festivities
There exists a festival of the elvers which takes place at the end of March with Indre.
