Elaidic acid
The elaidic acid (18: 1 trans 9) is a fatty-acid '' trans '', isomer of the oleic Acid.
It is produced at the time of the hydrogenation partial of plant oils.
The unfavourable effect of this trans fatty-acid on the risk of Cardiovascular disease is well established: " in study ATBC, there was a correlation between the total contribution in trans fatty-acids and the risk of death coronarien" , and " the severity of the coronary lesions appreciated by angiographe was correlated with the contents in trans fatty-acids of the plates (C18: 1 trans 9, i.e. elaidic acid, or C18: 1 trans 8) ".
