Eisbock

The Eisbock is a Bavarian Bière of low fermentation of the type Bock . It titrates between 8 and 10  % of alcohol.

It is about a Bière of season which rests on a partial congelation during maturation.

History

The birth of the Eisbock is not historically attested. The oral tradition allots it to the error of one employees of a High-Franconie brewery of which would have left barrels one harms outside. In the small hour, furious to see his frozen beer, the brewer would have constrained his workman to drink the beverage obtained as a punishment, with surprised taste buds of condemned.

Mixing

The mixing takes place like that of a Bock , in particular according to the Reinheitsgebot (German law on the “purity” of beer).

The difference consists of a congelation partial of beer during maturation. The ice is then withdrawn; a juice more concentrated in alcohol and more extremely in Goût is recovered.
