Duxelles

The duxelles is a finely chopped mince of Champignon S of Paris and drying ovens with the Beurre with Oignon S and shallot S used for corser or to stuff all kinds of culinary preparations.

This preparation was created by François Pierre of the Game preserve, cook of the marquis d' Uxelles, to whom it dedicated it.
