Droppings of Chavignol
The Crottin of Chavignol is a Fromage French, name of a village located close to Sancerre, in Berry (today departments of Indre and Expensive), profiting from a Appellation of Controlled origin since 1976. It is a cheese containing goat's milk with soft paste with flowered crust, of an average weight of 60 grams.
Its period of optimal tasting is spread out April at September after a Affinage 4 weeks, but it is also excellent from December to March. Production: 1.531 tons in 1998 (- 6,31% since 1996) including 100% with believed milk (41% as a farmer).
