Ingredients

  • 125 ml (1/2 cup) Molasses

  • 125 ml (1/2 cup) Corn syrup
  • 250 ml (1 cup) Brown sugar
  • 250 ml (1 cup) White sugar
  • 65 ml (1/4 cup) Butter
  • 1 spoon with table of white Vinegar
  • 1/4 spoon with the of Soda

Notes: The quantity of butter can be decreased according to the taste; one can also replace white sugar by one of three other sugars if it is wished; soda and the vinegar create bubbles of dioxide of carbon of way similar to the powder with paste and make candy lighter.

Preparation

To pour in a bowl the molasses, corn syrup, brown sugar, white sugar, the vinegar and half of butter. To reserve soda.

To make boil with soft fire until the mixture reaches 140°C (260°F). If you do not have a thermometer with confectionery, to try the method " test and erreur".

To stir up from 5 to ten minutes. The liquid must reach a certaince consistency; when one makes some fall a little into a small bowl from cool water, the drop must form a ball.

Once with 140°C (260°F), to add soda. (attention the mixture should approximately triple volume)

To pour in a bowl buttered beforehand and to let cool until it is possible to collect the car without burning the fingers.

To butter the hands well and to knead: to draw, extend the paste and to fold it into two, to start again indefinitely until the car is gilded, almost white. Rebeurrer hands with the need during kneading.

Lastly, to extend and twist the car in short periods. To cut of pieces with scissors.

To place on a buttered plate or to pack in waxed paper.
