DEFRA ( Department for Environmental Food and Rural Affairs - Department for the Environment, Food and the Businesses Rural) is with the the United Kingdom is responsible for environmental protection, the production and the follow-up of the Norme S concerning the Alimentation.

It manages also the relative questions with the Agriculture, the fishing, the trapping, the plant health ones, but also the rural communities; it produces or manages Statistique S on these questions.

It was created in June 2001, by fusion of the ministry for agriculture, fishing and food (MAFF) with part of the Department of the Environment, Transport and Areas (DETR) after the failure of the MAFF for correctly treating an epidemic of Foot-and-mouth disease.

The department laid out in January 2004 of approximately 8000 people to take and evaluate its actions.
