Dairy product

The dairy products (or dairy produces ) are products Aliment surfaces or industrialists produced starting from the Lait. Among milks used, the main thing is by far the Cow's milk (generally called “milk” without more precision), but one also uses the milk of Chèvre, of ewe, Chamelle, Yak, bufflonne… They are used primarily in the human consumption, either directly, or like ingredients in pastry making, cookie factory, pork-butchery, cheese dairy… like in the animal feeds (dried milk for the Veau X, whey for the Porc S…). The Caséine has also industrial uses (plastics, paper, textiles…).

Publicity for the dairy products

In the years 1990,3 spots TV praising the merits of the dairy products were diffused on television French. Putting in scene teenagers drinking of milk and eating cheese and yoghourts while making sport, these spots were very appreciated by the young people, but started polemics. Indeed, some saw sexual allusions in these images, however quite innocent. The band its (Emotion, " This is how we are") a whole generation will have marked.

Nutritional composition of milks and derived

  • the values are given for 100 grams of edible food products of the food
  • Base of calculation of the heating value for 1 gram (1 kcal = 4,18 kJ):
    • Glucides : 4 kcal or 17 kJ
    • Protéines: 4 kcal or 17 kJ
    • Lipides: 9 kcal or 38 kJ
    • ethanol: 7 kcal or 29 kJ (not métabolisables!)
