Curcumin

The curcumin or diféruloylméthane is the principal Pigment Curcuma (Curcuma longa) and saffron of the Indies. It is a pigment polyphenolic (curcumoïde) which gives a yellow color (it is the Colorant E100).

It is a soluble pigment in the Huile. Curcumin is extremely stable with heat and can generally be used in products presenting of the various degrees of acidities. It is sensitive to sulfur dioxide on levels higher than 100 ppm and is not very stable when it is exposed to the light.

It can be used in various applications including in kitchen in the ice creams, the sorbets, the dairy products, the dry and unquestionable mixtures standard of products of confectionery.

The whole of the experiments undertaken with curcumin made it possible to observe that it inhibits cancer with all the stages of its development (it prevents the entry of the chemicals in the cell). Curcumin is a powerful antioxydant more active than the vitamin E, a powerful disinfectant and antibactérien, as well as a powerful anti-inflammatory drug. All the tests which could be realized on the man with curcumin, showed that this molecule is not particularly quite comparable by the organization but, associated with the black pepper, its assimilation is multiplied by 20!
