Clapas
The clapas , speciality of Montpellier, is a chocolate (black, with milk or white) furnished with almond crumbs.
Description and history of its creation
The chocolate seller craftsman Amandeou' S.A. created in December 2004 a chocolate from the point of view of make a new speciality montpelliéraine of it. The clapas is a pure chocolate cocoa. It combines in mouth cracking and marrowy, with a composition of cream of tourron, feuillantine and cracks of puffed up rice. It is declined three colors: black, milk or white to recall according to its creator the Three Graces , emblematic statue of the Place of the Comedy. Word Occitan of pre-indo-European origin, the clapas means rock remains accumulation and refers to the origin with the site on which the town of Montpellier developed about the 10th century; fields of garrigues (from where stones) covers of kermes oak.Clapas was recommended by the club of the Chocolate Devourers of Paris.
