The Cidre of ice was born from the Québécois soil because it is the single Climat Quebec which inspired its development. Indeed, of the extreme Température S Hiver nales are necessary to obtain the concentration of the Sucre S necessary to its realization.

Several methods of natural “cryoconcentration” and “cryoextraction” are used. Inspiration for the cider of ice closer to the " Wine of ice " go back to 1989 and is allocated to the pioneer of the Québécois Viticulture contemporary, Christian Barthomeuf. From 1990 to 1995, some bottles are produced and available to Dunham. As from 1996, Christian Barthomeuf develops the process with the company the hidden side of the apple in Hemmingford, in Montérégie. It is as at this time as the marketing of the cider of ice begins.

In 2007, Quebec counts about fifty cider producers of ice, of which one of most important is the Domaine Pinnacle, which with fact of knowing this purely Québécois product with more than 25 countries out of 4 continents.
