Chopped ox

The Bœuf chopped is made starting from pieces of ox, chopped either by the butcher or industrially. It can be used as bases in many receipts. It can be used as such and seasoned (see the receipts below) or be used as a basis for a sauce: Sauce bolognaise or to even be consumed believed: Tartar ox.

Hygiene

The chopped ox (and meat chopped in general) are likely to be quickly oxidized or infected by bacteria like the Salmonelle. It must be imperatively preserved cold and fresh soup.

Steak tartare

The steak tartare is a dish containing believed chopped ox very fresh. The freshness of the principal ingredient is paramount to avoid any medical problem, the absence of cooking not making it possible to destroy the possible bacteria. Freshness also has an importance for the taste.

The meat is raised by various condiments, Câpre S, mustard, Ketchup, sauce Worcester, Oignon S, salt, Poivre tabasco. The steak tartare is generally been useful with chips, often with an Egg yolk believed.
