Célestine chicken

The Poulet Célestine is a Lyons chicken receipt jumped with mushrooms and tomatos, flambe with the cognac and the wine white, and seasoned with garlic and parsley.

History

In 1860, Rousselot, the " chief; saucier" restaurant of the Circle, street of Bourbon in Lyon, was in love with its owner, a young widow, named Célestine Blanchard. In its honor, he imagined a receipt which he named the Poulet Célestine . It is told that, allured, it finishes by him granting its hand.
