Brewery
A brewery is éthymologiquement and historically the name of the place where is brewed the Bière, i.e. where the principal stage of its development takes place: fermentation. This term can apply to an industrial site where it is manufactured in great quantity (breweries Kronenbourg, etc…), very as much as with a small local producer, tradesman manufacturing his own beer as that was historically the case: one speaks then from now on in this case about Microbrasserie.
In its industrial direction, a brewery is often made up of a whole of buildings where the raw materials are stored (Houblon, Malt of Orge); engines where the operations of Fermentation proceed; and finally of buildings where is stored and conditioned the end product, i.e. the beer (the residue naming the Drêche).
The person in charge of the delicate operation of fermentation is called brewer or Master-brewer .
Brewery-restaurant
By extension, this term can also indicate the name of the place where it is consumed, even if this one does not take part any more in its manufacture; in this last direction, the word brewery is now also included/understood like a restaurant having professional service, but in a way less formal than a Restaurant, with in particular of the fixed hours of service ( standard 12:00 - 15h 19:00 - 23h ).The designation or not of a restaurant as a brewery will obey in fact in practice with relatively subjective criteria, such as its decoration and its environment, the chart proposed, generally rather traditional, etc…
