The poultry of Bresse is a Appellation of controlled origin (AOC) French indicating a quality (and origin) of Volaille. The annual production is of approximately 1 200 000 individuals per annum.
General information
The avicolous exploitation in Bresse rests indirectly on nature Argile uses of the ground bressan, rich in water and thus particularly adapted to the culture of the Maïs.The poultry of Bresse is famous for its quality.
Characteristics
The schedule of conditions is precise:- white feathers, red peak (formed well), blue legs (dyed slightly bluish).
- the bird must live in freedom and in the open air the 3/4 of its life (minimum 10m ² by bird).
- Its food is mainly made up containing corn.
Three qualities: race, lifestyle and food, determine the quality of its flesh, famous as being of higher quality.
The chicken of Bresse can prove to be several colors. Each nuance, four, determines the precise origin of the race. Thus, we have the White one said of Bény, the Black one of Louhans and the Gray one of Borough. There remains a variety, that which one called the " Bleue" , disappeared today or not easily findable. One can also determine certain points of detail (but which are not for the purists) who will attest purity of the race, for example: a genuine chicken of Bresse must have the completely black eye, free from trace of yellow or white. The race " blanche" prevail today, even if the black, blue and gray varieties are they also representative of the " Bresse gauloise". The white one represents the best report/ratio in term of report/ratio to the meat and the facility of breeding. It thus had the preference of the stockbreeders. However, the black one, of quite particular aspect, proves to be the best layer natural and guaranteed it also a meat in conformity so that one can wait of a chicken of Bresse.
The traditional breedings are always of reduced size because it is not advised to put two Coq S in the same breeding, in order to avoid the conflicts. This type of breeding has the advantage of decreasing the extension risk of diseases, making it possible this poultry not to be treated with the antibiotics, which increase the water content of the flesh. The poultry of Bresse has a firm flesh thus.
A cock can live with a score of hens by ensuring the production of eggs (on average a little less than one egg per day and hen in freedom). They are nourished twice a day.
Each year, is organized with Borough-in-Bresse, December, a contest where the stockbreeders present their products, ready with the sale. A jury selects the best, whose price can reach relatively high prices.
The poultry of Bresse is produced in limited an enough zone (100 km out of 40 km) located on the departments of the Ain, the Saône-et-Loire and the the Jura. The most important cities in the breeding of the poultry of Bresse are Borough-in-Bresse, Louhans, Pont-de-Vaux and Montrevel.
Economy
Production of 1 200 000 volailles/an is ensured by 330 stockbreeders. The poultries cannot be shot down before one period and a weight minima:- Chicken S (four months and of a minimum weight of 1,2 kg),
- poulard (five months and 1,8 kg),
- Capon S (eight month and 3 kg),
