Blue Olivet
The blue Olivet is a cheese French originating in Olivet at the edge of the Loiret. A mottled natural white crust of blue is formed during the process of maturation, from where its name. The taste of blue Olivet is a little less strong than that of Camembert cheese. A light salt and mushroom taste is also made feel. The cheese is sold wrapped in paper paraffined or rolled up in sheets of plane tree.
There exist still three varieties of blue Olivet:

Olivet with the hay - the process of maturation of Olivet to the hay is not done under sheets of plane tree but under hay.
- Olivet with pepper
- Olivet with the Sage
