Black Pinot
The pinot - (or “ pinot black ”) - is a widespread Cépage of Vigne in France (not to be confused with the pineau).
The black pinot, noble Type of vine with early maturity, can be cultivated under the severe climatic conditions of the Europe of north. The Rendement of this seedling is rather weak, at least for the cultures respecting the quality of the wine (less than fifty hectolitres by Hectare).
The natural use is the production of Vin S reds of a beautiful color and a great aromatic complexity, which age well. These varieties are at the origin of the great wines of Burgundy. In fact, the juice of this type of vine, like all the pinots, is colorless and thus makes it possible also to obtain white on the condition of very quickly separating must from the grater. Thus, in Champagne, it is very often vinified in white; it can however be used to work out champagnes rosy by a more important pressing of this type of vine (in order to allow the extraction of tannins and dyes of the skin). Out of Champagne, the black pinot is also the Cépage of red AOC Coteaux Champagne and of the " Rosy of Riceys ". One also finds in Alsace confidential productions of " white of noir" , still wine obtained starting from pinot black collected in full maturity.
The best wines of pinot come from the Vigne S planted on grounds Calcaire S and only cultivated under moderate Climat S. In the year 1395, Philippe Bold the, duke of Burgundy, prohibited culture of the Gamay to the profit of the black pinot in its grounds. It is the first food decree in the world, precursor of the controlled labels of origin (AOC). A decree signed well before the German Reinheitsgebot defining the ingredients authorized in the mixing of the Beer in Germany.
In the South, taking into account the precocity of type of vine, the grapes mature at the time of the hot summer dayss, which gives wines of a great content of alcohol but without any interest.
In France, the culture of the black pinot currently exceeds the twenty-five thousand hectares. This surface is in progression. The principal vineyards are in Champagne (eleven thousand hectares) and in Burgundy (ten thousand hectares); it is present also in the valley of the the Loire, the area the Jura - Savoy and in Alsace, where it gives the only wine to light red dress of the area. But it is in Burgundy that the pinot black are expressed fully in France, producing wines exported in the whole world. The field of the Romanée-Conti, located has expensive Vosne-Romanée, produced - not without reason - the wine of the world…
In Swiss, the black pinot is the principal red type of vine. In the Canton of Neuchâtel, one also makes famous rosy called “Soft corn”. The famous one “Pares” in the canton of Were worth is an assembly of Pinot Noir (fifty and one minimum percent) and of Gamay.
With the the United States, the black pinot is the principal type of vine cultivated in the state of the Oregon.
In New Zealand, the black pinot is also cultivated with much success.
