Basler Brunsli

A Basler Brunsli is a Cookie with the Chocolat and with the typical town of Basle grooves, in Suisse.

Ingredients

  • 300 G of sugar

  • 300 G of not peeled, ground almonds or of hazel nuts chopped not too small…
  • 50 G of black chocolate
  • 1 spoonful with coffee of grooves
  • 1 pinch of clove out of powder
  • 3 egg whites
  • 1 spoonful of Kirsch or lemon juice
  • of sugar to extend the paste

Preparation

  • To grate the chocolate and to mix it well with sugar, almonds, the cinnamon and the powder of clove.

  • To slightly beat the egg whites with the kirsch or the juice of lemon. To add to the other ingredients and to work the whole in firm paste.
  • Per minor amounts at the same time, to lower it on a one centimetre thickness, a board powdered with sugar.
  • To cut out with the punch of the small forms.
  • to deposit Them on a buttered and slightly farinée sheet.
  • to let Them rest 3 hours.
  • to cook Them with 150 °C in the furnace approximately 20 minutes. Brunsli must be still very slightly hunides inside.
