Assembly (alcohols)

The assembly is the mixture of several type of alcohols to obtain a finished drink. Of Vine growing, the assembly consists in mixing several Cépage S and/or several vintages to compose a wine. The assembly is also practiced for the manufacture of several brandies like the cognac or some whiskeys known as Blend S .

Vine growing

In Vine growing, the assembly follows in certain areas of the traditions directly related to a Appellation or a specific Mark quality control.

The wines of Bordeaux use assemblies thus calling upon two or more of the Cépage S following: frank Cabernet, Cabernet-sauvignon, Merlot for the red wines, to which can be added the Petit verdot and the Côt, or Sauvignon, Sémillon and Muscadelle for the white wines, to which can be added the white Ugni, the Colombard and the white merlot. The label Meritage used by many Californian vineyards is also only granted to the wines according to this type of assembly.

In the same way, the wines having name Côtes of the Rhone are assembled starting from grenache black, Syrah, Cinsault, Carignan, Counoise and of Mourvèdre.

Certain wines also use the assembly not only of various type of vines, but also of various vintages. It is the case in particular Wines from champagne.
