Amorphophallus konjac

The konjac ( Amorphophallus konjac ) is a plant of the family of the Araceae which pushes naturally in the forests of Thailand, of the Vietnam, and southernmost China.

Culture and uses

The plant has a Rhizome tuberous spherical which can weigh 3 to 4 kg. The plant is cultivated in Indonesia and with the Japan like Légume. It is known in Asian herb trade as language of the devil where it would be useful in the treatment of cancer or the diabetes. In South Korea, the bulbs are consumed like potatoes, in Japan, in the form of vermiculations ( Shirataki ), of wafers and cookies. The konnyaku (こんにゃく) is obtained by mixing flour of Konjac with Eau of lime ( Kalkwasser or Limewater mixture of Hydroxyde of calcium and Eau). The Algue Hijiki ( Hizikia fusiformis ) is often added to the mixture like dye. From his flour, one extracts the Glucomannane, a polyoside used like thickener in agribusiness industry (E425). The mixture obtained is then boiled then one lets it be solidified. The konnyaku then is obtained. One makes of them the Japanese vermiculations called Shirataki .
