The orxata
-
Alboraia is known everywhere in the world like “the cradle and the source of the orxata ”, because one there works out, says one, best the orxata of xufes die tch ''' or ''' fés of the world. It is undoubtedly its most characteristic feature there, at least out of its walls.
-
There exists in all the Valencian Pays of the artisanal orxateries which produce directly the orxata starting from the raw material, the xufa , and of the two other exclusive ingredients: water and sugar. On the other hand, the industrial drinks that one finds in the supermarkets and other large surfaces, generally under the castillanized name of horchata of chufa, are of a doubtful authenticity, because their composition enter of the ingredients which do not have anything to make in true a orxata . Thus, the most known mark of horchata industrial, Chufi , introduced there proteins of milk, less expensive than the xufa . That is not without consequence on the taste, as one can suspect it. Although this type of practice has the downstream of the Denominació d' Origen d' Orxata of Valencia , it is obvious that the orxata should not contain milk, whose true amateur detects the taste at once.
